Tawa Baingan / Roasted Eggplant

Hello readers,

Sharing with you all today is a dish made with baingan (eggplant) – flavoured with different Indian spices.

Some easily found ingredients right in your kitchen, ease in making, minimum cooking time requirement and most importantly, the taste – YUM! is why it makes it to Besties’ list of recipes!

Tawa Baingan/Roasted Eggplant

  • Difficulty: easy

Ingredients

  • Eggplant/Baingan – 1
  • All purpose flour(Maida)- 4tbsp
  • Spices
  • Coriander Powder – 4tbsp
  • Garam Masala – 4tsp
  • Turmeric Powder – 4tsp
  • Red Chilli Powder – 3tbsp
  • Dried Mango Powder (Amchur) – 4tbsp
  • Salt to taste
  • Garnish – Chopped Coriander leaves


Directions

  1. Cut the eggplant in thin round slices (no need to peel).
  2. Sprinkle some salt on the eggplant slices and leave for 10mins.
  3. Take flour in a round plate, add enough water(about 4tbsp) to make a thin paste.
  4. Mix all the dry spices in a round plate.
  5. Take one round of eggplant, dip in flour paste from both the sides..Flour helps in binding spices to the eggplant.
  6. Using the other hand, coat flour-dipped eggplant with spice mixture from both the sides.
  7. Heat a non-stick pan, pour some oil on it.
  8. Transfer the spice-coated eggplant on the pre heated pan, cook for 5mins.
  9. Flip the eggplant and cook for another 5mins or until the eggplant is soft and cooked.
  10. Remove from heat and garnish with chopped coriander leaves.

    I have made different dishes with eggplants but never roasted. I also want to check out mango powder. That kind of sounds good.

    Nice recipe here. But I will be honest I do eat eggs but at certain limits like just eating omelet, boiled eggs, only that much. I dunno how can I eat that. But pretty sure my friends will love it, if anyone asks me about this I will surely give them this link. I am pretty sure it is tasty but I guess it is not for me. If you have any sweets, I am up for it.

    Nice recipe here. But I will be honest I really do not like Baingan or Brinjal. I dunno how can I eat that. Pretty sure my few friends will like it especially my mother she is like fan of Baingan. If anyone asks me about this I will surely give them this link. I am pretty sure it is tasty but I guess it is not for me. If you have any sweets, I am up for it. But P.S the way you created, you should have opened your hotel by now. Out country is a foodie. You will be happy and earn happy.

      Thanks for the great words Aditya! As V posted this recipe, I had same thoughts as I am so anti eggplant! I didn’t even know how to pick one from grocery store. I tried this yesterday and I am a fan now! I would strongly suggest you to try it out when you cook it for your friends and your mom 😊
