In this post, we have brought for you a very easy to bake and very delicious dessert – pineapple upside down cake. This cake has its name because of the way it is baked. Unlike usual cakes, this one starts with layering pineapples at the bottom followed with batter on the top and flipped after baking process is complete.

Ever since I tasted pineapple upside down cake for the first time, I was on a hunt for a good recipe. I knew I would be restless unless I had that satisfaction of being able to have it whenever I want to. Because of this, I have tried like zillion recipes of egg less upside down pineapple cake and finally found my peace when I tried this one out.
This recipe is a perfect mixture of that right pineapple flavor, soft spongy texture and sweet pineapple glazed top layer. The ingredients used are rather basic and easily available. So lets’s get right into this easy peasy recipe.
Pineapple Upside Down Cake (Eggless)
A delicious dessert with pineapple flavored sponge and sugar glazed pineapple slices on the top. A treat for both eyes and tummy!
Grease the baking dish and arrange the pineapple slices at the bottom. You can cut the slices in half to layer along the sides in case the slices are big in size.
Heat a pan and add the sugar for caramelisation. Heat sugar until it turns to a beautiful golden brown syrup.
Pour this syrup over the pineapple slices nicely coating each of them.
Preheat the oven to 180C/350F.
In a large bowl, whisk together condensed milk along with melted butter until they are mixed and come out rich and creamy.
In a separate bowl, add all the dry ingredients - APF, baking soda and baking powder. Dry whisk these together to mix them thoroughly and to add some air to the the mixture.
To the condensed milk-butter mixture, slowly add in batches the dry mixture and aerated soda alternating and mixing simultaneously.
You may not need to use all of the aerated soda. Stop adding more soda when all the wet and dry ingredients are mixed and batter has reached a flowing consistency.
Once the batter is nice and folded, add pineapple essence and give one last mix.
Pour this batter in the prepared baking dish and tap the dish to remove any air bubbles. Bake the cake for 35-45 minutes or until inserted toothpick comes out clean.
Take the cake out of the oven and wait for 10 minutes to let it come to warm temperature.
Run a knife along the sides of the cake to ensure the cake is not sticking to the baking dish and flip the dish onto a plate. Rearrange any pieces that may have stuck to the dish bottom.
Garnish with fresh cherries and that's it! Enjoy warm or cooled down.
