Eggless Orange Muffin
Hello People!
This time we bring something to satisfy your sweet cravings. Few years back, when I was at my parents’, I was offered this amazingly yummy cake. It was super soft, crunchy outer layer and had orange fruit flavor to it. Up till that time I had never even thought of a homemade cake with orange flavor let alone how it would taste. I knew I needed the recipe of this cake then and there. Since then, I have made it so many timesĀ and the cake comes out super soft and delicious every time. Though as part of this post, we will use this recipe to make eggless orange muffins instead of cake.
So without further ado, let’s get started with the recipe.

- 1 1/2 cup All Purpose Flour (APF)
- 1/2 cup Canola Oil
- 1/2 cup Fresh Orange Juice You can use store bought also but fresh is preferred
- 3/4 cup Powdered Sugar
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 2 tsp Orange Zest
- 1/2 cup Thick Curd/Yogurt

- Preheat the oven at 180C/350F.
- Sieve APF, baking soda and baking powder together for a couple of times. You can also dry whisk them together. This step ensures they ingredients are mixed nicely and batter is fluffy.
- Set your baking tray and place the muffin sheets (if using) in the tray. You will need to grease the tray molds if not using sheets.
- In a mixing bowl, whisk together sugar and curd until a creamy mixture is formed. Add to it fresh orange juice, orange zest and canola oil. Mix thoroughly.
- Add the flour mixture in 2 batches and fold the mixtures until a smooth batter is formed.
- Pour the batter up to 3/4 level. Tap the molds to even the batter and remove air.
- Bake the muffins for 30-35 minutes or until the toothpick comes out clean.
- Remove, from oven and muffins are ready! Wait for them to cool before you binge š
- Instead of muffins, you can also make a cake. Take a cake tin, grease with butter/oil, dust APF and pour the batter. Garnish with walnuts. It may need additional 10 minutes to cook completely.
- Always fold the batter lightly and do not whisk once the dry ingredients and wet ingredients are together. This ensures a softer and lighter result.
- Use only the orange part of the fruit to make zest, not the white part.
