Makhana Kheer (Lotus Seed Pudding)

Makhana or lotus seeds is a very nutritious ingredient which is very good if added in our diets on a regular basis. It is a rich source of protein and many micro nutrients required in our body. This is very good for toddlers to help meet their protein requirements. While there are many ways of eating makhanas like curries, snacks etc, we present our sweet version of this ingredient which can be had any time of the year – Makhana Kheer.

It is specially made during Navratras, 9 days of Devi Mata celebrated in India.

  1. In a non-stick pan, heat ghee. Add makhanas and roast them for 2-3 minutes until crispy. Once done, crush them coarsely and set aside.
  2. Heat milk in a non-stick pan on medium flame. Before it comes to a boil, add crushed makhanas and sugar.
  3. Keep stirring even after it boils. Keep boiling for 4-5 minutes until the consistency becomes thicker. Add Pistachios.
  4. The Kheer is ready. Garnish with some saffron strands and serve hot or cold!

  3. Lotus seed pudding? Wow, I’ve never heard about that and I like to think I’m quite the foodie!! I am going to have to attempt making this before! It sounds delish!!
